I made this summery pasta salad while we were on vacation and it was so simply yet yummy that I needed to share! I am not a cook by any means so anything that is easy but delicious is my kind of recipe.
I found this recipe in an Instagram Reel from Pretty in the Pines but I tweaked it a bit to make it my own.
Summer Pasta Salad Ingredients
- Pasta
- Arugala
- 1 bag frozen peas
- 1/2 cup Olive oil
- 1 lemon
- 2 tbsp Dijon mustard
- 1 Clove of garlic (or a rounded 1/4 tsp of jarred minced garlic)
Summer Pasta Salad Recipe
- Cook a box of pasta of your choosing. Let it cool for a bit
- Microwave or cook frozen steamable peas
- Mix together 1/2 cup of olive oil, 2 tbsp dijon mustard, lemon juice (from 1 lemon), and garlic. Pour mixture over pasta once cooled
- Top with a couple handfuls of arugula and the bag of peas
- Done!
I can’t eat cheese so I never add any in but my mom likes to add feta cheese on the side if you want to add it in yourself. We have also made this recipe with horseradish dijon mustard and it gives such a good kick to it!
I like making the pasta salad with a shelled pasta which I did on our vacation (below) but my mom made it with bowtie pasta and it was still so yummy! Any pasta that you like would work so well.
